The BEST Vegan Mac & Cheese

When I transitioned into a vegan lifestyle 6 years ago, I feared that my mac & cheese lovin’ days were over! WRONG! You can still enjoy the fulfilling, “cheesy” but nutritious experience of a solid meal! This recipe took a few years to perfect, and I’m proud to say we nailed it! Ingredients Health Benefits

  • Sweet Potato – They’re high in fiber and antioxidants, which protect your body from free radical damage and promote a healthy gut and brain. They’re also incredibly rich in beta carotene, which is converted to vitamin A to support good vision and your immune system.
  • Golden Potato – One surprising benefit of Yukon Gold potatoes is that they are high in vitamin C!2 Vitamin C is an important antioxidant and is good for maintaining immune system health. Your body needs vitamin C to absorb iron, another essential nutrient.
  • Carrot – They may promote healthy vision, balance your blood sugar, help with weight management, lower your risk of cancer, regulate blood pressure, reduce heart disease, improve immunity, and boost brain health.
  • Yellow Onion – They are high in vitamin C, which may help regulate your immune health, collagen production, and iron absorption. It’s also a powerful antioxidant that could help protect your cells from unstable, damaging molecules.
  • Garlic – It is commonly used for conditions related to the heart and blood system.  Amazing for antibacterial and fighting against virus.
  • Oat Milk – Contains 300 to 400mg of calcium, which is important for strong bone formation and health. It also contains potassium and magnesium, which are recognized as being two bone-healthy minerals. 
  • Nutritional Yeast – is a great source of vitamins and minerals. It also contains all nine essential amino acids, making it a complete protein like those found in animal products. Complete proteins are important nutrients that assist functions like tissue repair and nutrient absorption. They may also prevent muscle loss.
  • Kosher Sea Salt – Helps keep minerals and calcium soluble in our blood, regulates nerve stimulation and balances muscle contractions. It also produces hydrochloric acid in the stomach and helps digestion. Kosher salt helps regulate the electrolyte balance in the body and also maintains blood cells and blood vessels.
  • Turmeric-The spice can contribute to healthy digestion as a result of its antioxidant and anti-inflammatory properties.
  • Organic Dino Noodles (Get Here) – These are my favorite!!!! It holds the sauce well and they are healthy and organic!

The BEST Vegan Mac & Cheese

Mt. Shasta Mom developed a healthy, vegan, and oil free mac & cheese.

Equipment

  • Medium Saucepan
  • Noodle Strainer

Ingredients
  

  • 2 Large Carrots
  • 3 Medium Golden Potatoes
  • 1/2 Large Yellow Onion
  • 1 Large Sweet Potato
  • 3 Large Cloves of Garlic
  • 1/3 Cup Oat Milk
  • 1/4 Cup Braggs Nutritional Yeast
  • 1 TBS Kosher Sea Salt
  • 1 TSP Turmeric
  • 10 oz Box of Organic Noodles

Instructions
 

  • Cut carrots, yellow, golden potatoes, yellow onion, sweet potato, and garlic cloves into cubes. 
  • Add the cubed vegetables into a large saucepan.
  • Cover vegetables with water and bring to a boil (high heat).
  • Once items are boiled, bring to a medium heat and let boil for 30 minutes (or until carrots are fork tender).
  • Strain water from vegetables and place in a large mixing bowl.  
  • Add oat milk, Braggs nutritional yeast, tKosher sea salt, and turmeric to large mixing bowl with vegetables.
  • Use a hand held blender to blend ingredients until creamy and smooth. Some texture is normal.  
  • Boil noodles separately, cook fully, strain and add to sauce. 
  • Mix noodles and sauce together and enjoy!
